Matthias Merges was Charlie Trotter’s right-hand man for more than a decade, but he’s switched gears to Japanese street food and yakitori, proteins and vegetables cooked on an out-front charcoal grill at this casual eatery. As such, the menu offers an edited list of small dishes amounting to just a few bites when shared, but executed with precision and mastery. Seasonal vegetables arrive grilled and sizzling. The twice-fried chicken, a more ample offering in three large round-shaped discs, comes crispy on the outside, juicy and piping hot inside with a spicy citrus sauce. Order the delicate sea urchin, gently placed atop nori egg rolls. Soft shell crab in a shallow miso-spiked broth also shines. For dessert, don’t skip the soft serve --- homemade, creamy and flavored from hazelnut to Szechuan peppercorn, caramel and cocoa nib. A small bar up front affords diners a peek at the craft cocktail mixology and yakitori grilling in action.
