Spiliadis, the affable owner of Estiatorio Milos in
Montreal and New
York, will have a much shorter distance to ship
his Greek specialty items at his newest restaurant,
Milos Athens. Housed in the Hilton Athens, which was
completely renovated to welcome the 2004 summer Olympics,
the restaurant’s soaring ceilings and poolside
terrace evoke a Greek sailing vessel. And what a crew
Spiliadis has assembled to pilot his gastronomic Odyssey:
Four Greek chefs create the menu, assisted by a rotating
cast of traditional cooks in the “grandmothers
kitchen,” which showcases the country’s
regional cuisines. Like its siblings in North America,
Milos Athens focuses on seafood, appearing in dishes
like monkfish saganaki and steamed, fresh botargo in
saffron-wine sauce; as well as fine wines, scouting
out the up-and-coming Greek bottlings to complement
favorites from the New and the Old World.
