Fungi and mold usually spell bad news for wine grapes, but botrytis does not. The so-called "noble rot" shrivels grapes and concentrates the sugars, creating ideal conditions for dessert wine. Handley Cellars 2007 Late Harvest Riesling is an excellent example of the type. Featuring a moderate level of alcohol (10.5 percent) and intense floral and tropical fruit aromas, it manages to balance sugar and acidity so that the wine does not come across as cloying or syrupy.
