Named after the ancient Greek word for yeast, an essential ingredient in wine fermentation, Zyme was founded in 2003. Made in a similar manner to Amarone, Valpolicella Classico Superiore is lighter and less expensive. Made from Corvina, Corvinone, Rondinella and Oseleta grapes, it exhibits concentrated red fruit flavors with spice notes and moderate tannins.
