Despite the designation Cuvée des Moines (Monk's Blend), this line of Besserat de Bellefon Champagnes was developed not by monks, but by Victor Besserat in 1930. His idea was to create Champagnes that could accompany any meal. His dry Blanc de Blancs certainly is versatile, offering citrus and floral aromas on the nose. In the mouth, it reveals apricot and honey flavors with soft mineral notes.
