Laetitia Vineyard & Winery was one of the first SIP Certified (Sustainability in Practice) vineyards in California's Central Coast. Their 2010 Cuvée M is made of 50 percent Pinot Noir and 50 percent Chardonnay, creating a wonderfully balanced sparkling wine that opens with aromas of lime and yeast and finishes with notes of lemon and apricot on the palate.

Catch of the day: Start off by pairing this blended bubbly with some raw oysters.
