Tasting Notes: Father and son duo Tom and Rob Sinton specialize in making cool-climate wines from Napa Valley and Bordeaux, in addition to a soon-to-produce property in Placerville, California. The 2012 Cuvée À Gauche Bordeaux is produced by blending together Cabernet Sauvignon from the left bank of the Gironde Estuary with Merlot and Cabernet Franc from the right, resulting in a blend that is 65 percent Cabernet Sauvignon, 25 percent Merlot and 10 percent Cabernet Franc. This robust mix offers notes of plum, cherry and blackberry on the nose, and displays flavors of dried herbs and creamy oak with silky tannins. It is an intense but well-balanced wine, ideal for warming up on those unexpected cool summer evenings.
Food Pairings: Roasted duck, veal, couscous, fig and goat cheese salad
