Refreshing Summer Craft Cocktails

When summer is in full swing and you’re craving a refreshing cocktail, follow Ocean Prime Restaurants‘ recipes for these three seasonal sippers.

1. Aperitivo

INGREDIENTS:
– 5 ripe raspberries
– ½ oz. fresh-squeezed lemon juice
– ½ oz. simple syrup
– 1 ½ oz. Aperol
– ¾ oz. club soda
– 3 oz. dry sparkling wine

Garnish:
– 3 blackberries
– 2 raspberries
– 2 lemon wheels (¼” and slid down the side of the glass)

METHOD:
Prep Glass:
Mixing Tin / Service Glass: Wine Glass
Combine raspberries, lemon juice, simple syrup, Aperol & club soda in mixing tin.
• Fill larger mixing tin to the top with ice.
• Shake vigorously for ten seconds to break up raspberries and combine cocktail.
• Double strain into service glass filled halfway with ice and ½ garnishes.
• Top with sparkling wine, stir.
• Add remaining ice and garnishes.

2. Spanish Gin & Tonic

INGREDIENTS:
– 1 ½ oz. gin
– ½ oz. fresh-squeezed lime juice
– 1 bottle (187 ml.) Fever Tree Indian Tonic

Garnish:
– English cucumber ribbon
– 5 juniper berries
– 1 edible flower

METHOD:
Service Glass:
Snifter
Combine gin and lime into service glass.
• Add ice while layering in ribbon of cucumber & dropping in juniper berries.
• Place in one small bunch of edible flowers.
• Serve tableside with remaining FeverTree Tonic sidecar.

3. Summer Saké

INGREDIENTS:
– 1 ½ oz. vodka
– ½ oz. saké
– ½ oz. fresh-squeezed lemon juice
– ½ oz. simple syrup
– ¾ oz. strawberry purée (cut 1:1 with water)

Garnish:
– floating orchid flower

METHOD:
Prep Glass:
Mixing Tin / Service Glass: Coupe
Combine all ingredients in smaller mixing tin.
• Fill larger mixing tin to the top with ice.
• Shake vigorously for ten seconds.
• Strain into chilled service glass.
• Garnish.
