808 La Jolla, sister to the Las Vegas hot spot of the same name, is a San Diego hit rivaling its popular Aventine neighbor Café Japengo. Chef Jean-Marie Josselin marries French technique with Hawaiian cuisine, resulting in exquisitely executed dishes such as foie gras with vanilla-port reduction, deconstructed ahi rolls and roasted duck-vegetable egg rolls with mango dipping sauce. Peppery miso sauce accents the trio of dim sum (ravioli filled with lobster, prawn and scallops) nicely, but heat overpowers the nuances of the spicy coconut milk-basil lobster soup. Although we prefer to make a meal of the many Asian tapas, there are several well-done entrées to choose from including slow-roasted butterfish, Angus beef filet and salmon with a Szechuan pepper-tarragon cream sauce.
