Santa Monica's aestus offers a California-influenced, seasonal menu. Andrew (Dru) Betita has taken over as executive chef, replacing Alex Ageneau. Betita was most recently chef David LeFevre's sous chef at M.B. Post and Fishing With Dynamite. Guests may find a house-made charcuterie board with duck pâté and pork rillettes; octopus salad with flageolets, chorizo, peppers and celery; and fire-roasted chicken with piquillo peppers and roasted carrots, prepared on an open, wood-burning grill. Former Spago wine director, Kevin O'Connor creates a wine list composed of old and new world selections, and bar director Marissa Grasmick (The Varnish) mixes classic and craft cocktails.
