At All Souls Pizza, the bedraggled parking lot and converted-diner exterior belie the thoughtful culinary experience awaiting within. The restaurant’s success lies with its seasonal offerings and attention to detail. Pizza starts with the meticulous selection of organic heirloom grains that are then hand-milled. David Bauer of Farm & Sparrow bakery fame lends his baking artistry to make sure that the crust is the final word to every slice. Chef Brendan Reusing provides rustic yet creative fare that doesn’t stop at pizza, utilizing myriad methods of preservation to extend the life of the ingredients he prefers most. Look for the beet salad, a balanced blend of sweet, earth and acid flavors over light local lettuces, or any of the rotating house sausages or polentas.
