It is a grandiose, pillared room of dramatic proportions with painted murals and an attention-grabbing, stained glass cupola back-lit at night. This is a sophisticated haute cuisine operation with impeccably drilled staff. The menu reads well and rarely disappoints. Roasted sea scallops come with gutsy black pudding, parsley and garlic sauces, which do not mar the delicately cooked seafood. The cooking of fillet of Highland beef with galette potato, baby spinach and burgundy jus do justice to the very fine ingredients. The cheese trolley is truly first-rate with a selection of cheeses in topnotch condition. Puddings excel too: try the chocolate fondant with pistachio ice cream for a satisfying finale. Serious consideration has been given to a weighty wine list. Set 3-course lunch £28; menu degustation, 7 courses £50, with matching wines £70.
