Taiwan-born chef Thomas Yeh showcases the cuisine of his homeland, with Shanghainese flourishes, at Ahgoo's Kitchen in El Monte Plaza. The space belies his cooking's finesse, with pale yellow walls, seven wood tables and minimal embellishment. Each meal starts with kimchi and marinated bean sprouts. From there, forget what you know about Chinese-style green onion pancakes. Here, the cakes are fluffy and almost two inches thick, with crispy coats lined with sesame seeds. This dish is made to order, meaning you can wait 40 minutes, and that wait is worth your time. Simple sautéed dishes are also good, particularly fried a choy with crunchy stems and garlicky jus. Sweet shrimp tossed with scallions are well executed. Pan-fried pork and napa cabbage dumplings have thicker skins that hold up to high heat. Fried thin rice noodles aren't especially noteworthy, so opt for shredded pork with dried bean curd instead. These firm, nutty strands are better than noodles in Yeh's hands. To drink, don't expect to find more than tea, water or soft drinks.
