About the restaurant: Japanese-born chef Toshitaka Omiya, previously at L’Agapé, cooks for this tiny restaurant in the heart of the Latin Quarter. Customers are tended to by a very courteous and professional staff.

Likes: The rare ingredients; the creative dishes.
Dislikes: The dry-aged beef that, the day of our visit, tasted a little bit hard.

Food & Drinks: The kitchen team, who can be seen through a huge glass in the back of the room, achieves elaborate dishes with original seasonings and faultlessly cooked ingredients. Many products come from different parts of the globe, such as the Australian black truffle, the daikon (Japanese white radish) and the lemon-flavored Italian focaccia. The lunch menu features finely crafted fare, for instance poached oyster with radish cream and lemon jelly, dry-aged beef (that alas tastes a bit hard) with daikon and cabbage, and chocolate moss topped by hazelnuts. For dinner, expect poached foie gras with duck broth and vegetables, Simmental beef with smoked eel, and lamb with eggplants and ricotta. Well-stocked cellar and a few wines available by the glass, suggested verbally, such as the mineral Chorey-les-Beaune Domaine Maillard 2015.
