Apex Restaurant Review:

Apex, the signature restaurant at Montage Deer Valley, presents a beautiful and elegant lodge-like dining room with fireplaces and mountain views. The bar and seasonal outdoor patio afford still more opportunities to gaze at the surrounding scenery. Located at the base of the Empire Express chairlift, this is also a convenient ski-in/ski-out restaurant that offers breakfast, lunch and dinner. The cuisine highlights fresh, local products, and the menu even boasts a list of artisanal purveyors, including Copper Moose Farm and Snowy Mountain Creamery. Breakfast begins with build-your-own omelets and other classic morning fare, while lunch features dishes such as sweet pea gazpacho; wild salmon salad with orange sherry vinaigrette; and blackened shrimp tacos. At dinner, you can indulge in spicy tuna tartare with Asian pears, mint, jalapeño, pine nuts, ancho chilies and a quail egg. Global influences appear in main dishes, which range from Atlantic salmon with red beet and quinoa tabbouleh to au poivre buffalo rib-eye. Among the desserts, you’ll find Granny Smith apple lasagna with salted caramel ice cream. To complement your meal, make a selection from the comprehensive wine list, classic cocktails or draft beers, which include brews made exclusively for the resort by Park City's Wasatch Brew Pub. Monty's Belgian White Ale is named after the friendly Bernese mountain dog that resides at the Montage Deer Valley and greets guests.
