Japanese characters are painted on the side of the building that houses Brush Sushi Izakaya, while its interior is a modern space with lots of windows visually accessing the street. Décor takes advantage of the historic brick walls to lend texture. Imagery doesn't so much lean to a Japanese aesthetic as it does to contemporary dining needs, so over the sushi bar hangs a large image of a fish. Seafood comes from local sources and Tokyo's Tsukiji Market, while chicken is from Grass Roots in coastal Georgia. Miyazaki, Japan, A5 Wagyu beef and Kurobuta pork sustain the quality requirements chef/owner Jason Liang has imposed. Start with hotate, the live scallop. After that, sample everything from a skewer of pork belly to a roll, many of which may be ordered in two sizes, perfect for the solo diner. We like the green tea with this fare, but the extensive collection of sakés (most served cold) and shochu is complemented by a short but smart wine list and abundant beer choices.
