Chef Shaun Hergatt is behind Caviar Bar at Resorts World Las Vegas. Designed by Roman Vnoukov, the 105-seat restaurant’s sleek design includes Russian influences throughout with a color scheme of dark colors with hints of silver and bronze, and the exterior and bar area’s walls are comprised of vibrant diamonds. Caviar offerings are proprietary world-class selections of Kaluga, Golden Ostera and Classic Sevruga, served with house-made blinis, crème fraiche and chives. The rest of the menu features house-cured meats such as premium Jamon Iberico, Culatello and Prosciutto; fresh seafood options of oysters, Gulf shrimp cocktail, Maine lobster, Diver scallop, Japanese hamachi, bluefin toro and Atlantic salmon; Australian wagyu beef with black olive and caviar; pastas such as gnocchi with beurre monte, cauliflower risotto with smoked sturgeon; and desserts including the signature Caviar Ball with blackberry and sweet cheese.
