Ben Edgerton and chef Andrew Wiseheart are behind this "ranch-to-table restaurant,” where the former’s South Texas family ranch (also called Contigo) is used for inspiration and sourcing. The rustic atmosphere reflects the ranch’s architecture: open-air but shaded, with ropes of white lights and misters when it’s hot and heaters to chase away the chill. The laid-back atmosphere, however, should not imply casual cooking. Dishes are executed with precision, and the craft cocktails and beers are some of the best in Austin. Start with the ox tongue sliders coupled with seasonal vegetables, and during the summer months, a bowl of marinated Texas okra with tomatoes and walnuts, and a basket of tempura-crisp green beans with sambal aïoli. For a main course, consider the rabbit and dumplings, or the standout house-made pork liver pâté. All of the meats from the charcuterie board hail from the ranch and reflect the changing seasons. Order the s’more for dessert, an elevated version of a childhood favorite.
