Chef Douglas Rodriguez, often called the "Godfather of Nuevo Latino Cuisine" due to his pioneering restaurants of the early 90s, creates modern Latin fusion dishes served with playful tropical drinks. Snag a poolside cabana and start dinner with flash marinated ceviche such as snapper and conch in sour orange juice with red peppers and crispy onions, or get a sampling trio. Then move on to the signature smoked marlin tacos in malanga shells; American Kobe meatballs in brandy cream; or lobster empanada on sweet corn mash with tarragon crema. For Cuban-inspired entrées, try the crispy pork belly with guava barbecue sauce; malanga gnocchi with wild mushroom Bolognese; or sugar cane tuna. Dessert is a Cuban cigar made of chocolate. There’s a comprehensive (if predictable) wine list to accompany the spiced but not spicy-hot fare.
