Cecconi’s former general manager Marino Monferrato has partnered with Salerno native chef Massimiliano Di Lascio at this sprawling 7,000-square-foot pizza bakery in East Hollywood. Enter the cavernous dining room --- a former mechanic’s shop with exposed vintage brick and high wood beams --- to discover a theater of four giant 900-degree pizza ovens imported from Italy (with volcanic rock bottoms from Mount Vesuvius), turning out Neapolitan-style specialty pies in 60 seconds. Each is made with ingredients sourced from Campania, including fresh mozzarella di bufula, flown in weekly. It’s a great show, with chefs conversing in Italian, offset with lots of stacked firewood. Glossy communal wood tables are convivial, and the staff is friendly. The back has flat screens with live soccer, too. With their slightly charred, chewy crusts, the pies are just what Neapolitan pizza should be. The simpler margherita shows off the delicate mozzarella; specials come with prosciutto crudo and rucola, or sometimes bresaola or smoked mozzarella. The Desano signature pie, with robust Italian sausage taking center stage, is a hit. There are also calzones and fresh salads, an antipasto board, and for dessert, Italian gelato in seven flavors and authentic cannoli.
