Popular as the lunchtime buffet is, you have to visit for dinner to truly experience this menu’s diversity. St. Louis' first Nepalese restaurant also serves authentic Indian and Pakistani fare plus some of the most common dishes from South Korea. The kitchen masters the details right down to the house-made naan (unleavened bread baked in a clay oven), paneer (homemade cheese), kimchi (pickled cabbage) and achar (spicy pickled fruits and vegetables). Admittedly, chef Devi States tweaks some preparations to accommodate Midwestern palates --- for one, Tibetan-style momos (dumplings) are traditionally filled with yak meat. Midwestern farmers haven't discovered the lures of the yak, so here they’re made with pork, turkey, lamb or vegetables. States, a physician who’s as passionate about health as he is about food, has vegetarian and gluten-free options clearly marked on the menu. Kheer, a rice pudding dessert made with coconut and cardamom, is worthy of a seduction.
