The old farmhouse situated on a lonely stretch of U.S. Route 4 near Killington Resort belies the fine dining experience offered inside. From hors d'oeuvres of Vermont cheddar profiteroles to butternut squash soup, to an entrée of pheasant with chive gnocchi and a dessert like the warm apple tart with maple sauce, chef Ted Fondulas teases your palate with sophisticated flavors that enhance each other without overwhelming. Dishes like the traditional Angus beef with potato pie and the more exotic baby potpie of Vermont braised rabbit are prepared with skill. Although à la carte items are offered, opt for the three- to six-course prix-fixe menu or the four-course wine tasting menu. And for those who can't decide, there's a multi-course, small-portion feasting menu. The interior of Hemingway's is what you would expect in an elegant country restaurant: a brick-walled room overlooks the summer herb garden (and in winter is warmed by a fire), and a vaulted room has walls painted peach to lend a cozy feel. But it's not the ambience you'll remember. From your first sip of wine to your last nibble of dessert, Hemingway's offers a dining experience you will cherish.
