About the restaurant: Ma'ono bills itself as a fried chicken and whiskey destination, which conjures up a far more casual image than this sleek, modern reality. Snag a seat at the bar (adjacent to the open kitchen), communal table or one of the wooden booths nestled against the wall.

Food & Drinks: The menu circles the Pacific with Northwest ingredients, American whiskey, Hawaiian side dishes and Korean-style chicken. The star of the show is pricey but first-rate fried chicken, a concept that evolved from the popular Monday night fried chicken dinners from the same chef and owner's previous effort, Spring Hill Restaurant & Bar. Brined and then soaked in buttermilk, the whole fried chicken at Ma'ono (the word means "make tasty" in Hawaiian) includes 10 huge, juicy pieces, plus dipping sauces. Add on sides of kimchi and rice.
