Chef Masa Miyake's restaurant space in the Old Port is a dramatic change from his former little spot on Spring Street. Miyake strives to source the best and freshest ingredients from around the globe; however, the menu places special emphasis on locally raised meat, fish and produce, some coming from his own farm. Choose the four-course menu, omakase or opt for à la carte. Dishes might include thinly sliced raw salmon served with capers, mustard vinaigrette and ohba, or a "super toro" tuna and avocado roll topped with diced medium toro, truffle oil, spicy sesame oil and scallions. Don’t miss out on pork belly from the seasonal menu. And since you’re in Maine, try the fresh Maine lobster with crème fraîche, tonburi, green peppercorns and dill. It's always a study in umami at its best, and all dishes come out looking as attractive as they taste. Dessert might be a sampler of small bites, perhaps chocolate.
