This frisky Inman Park establishment takes its name from, yes, a one-eared stag whose taxidermied head occupies an honored space over the bar. Similar companions, all with both ears, inhabit one wall. Surely chef-owner Robert Phalen has some crazy food dreams because his kitchen seems the very soul of the unconventional, although his dishes work well most of the time. And even when we think they don't, they're interesting. The daily changing menu relies on sustainably produced, organic and locally grown foodstuffs. Almost everything is crafted in-house, including the cured meats. You might find a brandade made from smoked eel or catfish, the latter shaped into fritters, a knock-off of a Portuguese dish. Rabbit turns up in many items, as rillettes for an appetizer or in a main plate with nettles. Pig tail may wind up in a terrine, and pig ears in yet another clever starter. Unusual fish offerings could include sheepshead, a fish that is rarely seen on menus, and margate. Pastry chef Kristia Paz turns out desserts that keep pace with the cooking’s creativity --- try her chocolate hazelnut praline cake. The wine list presents a wide range of unique and perhaps unfamiliar choices that support the food. Oyster Happy Hour is held every Monday through Friday from 5 p.m.-7 p.m. at the bar, with a rotating selection of chef’s choice oysters for $1 each.
