Paley is the expansive fine-dining restaurant this Hollywood neighborhood has long needed. Nestled in the revived Columbia Square complex on Sunset and Gower (home of the former landmark CBS Studios), a striking dining room offers mid-century stylings, nearly 250 seats, a swank bar and an open kitchen. Add in a luxe, sprawling patio and Paley is a versatile spot for business lunches or a chic date night. Expect plenty of executive/creative types from nearby companies like Paramount, BuzzFeed and NeueHouse --- they're bulking up expense accounts with pale glasses of Loire Sancerre or craft cocktails mixed with ingredients like cedar-infused Campari. Chef Greg Bernhardt’s (Church & State) menu spotlights local and seasonal California fare with varying results. Hamachi with shaved fennel and market vegetables is freshly pleasing, and parsnip soup with tiny pickled mushrooms, brioche croutons and tarragon is outstanding. A butter lettuce salad with English peas comes sadly drowned in a blizzard of nori goma furikake. Our filet of fluke with celeriac purée was elegant but a bit overdone; a safer bet is the dry-aged hanger steak. Save room for strawberry rhubarb cheesecake, or 100-year-old Louis XIII Remy Martin Cognac, which will run you $150 an ounce. The wine list is fairly serious and offers good choices by the glass.
