After opening a successful Thai-accented wing shop on the Lower East Side, Portland chef Andy Ricker didn’t rest on his laurels. Soon after, he fired up the burners of his Thai restaurant in Brooklyn’s Red Hook neighborhood. Ricker’s menu focuses on a Thai cuisine that hasn’t often been translated across the Pacific. The Yam Samun Phrai salad is laden with more than a dozen ingredients, including betel leaf, lemon grass, basil, ground pork and dry shrimp in a mild coconut milk dressing. Other dishes might include charcoal grilled Niman Ranch pork neck rubbed with garlic, coriander root and black pepper and served with chilled mustard greens and a spicy chili/lime/garlic sauce. House wines are available, but stick to the Asian-ingredient-themed signature cocktails that pair nicely with the food.
