There’s often an expectation of formality around multi-course Italian meals in St. Louis. That’s not the case at chef Mike Randolph’s eatery; from the service to décor, it’s friendly and a little whimsical --- the stuffed wild boar over the bar is a case in point. The site on the western edge of The Loop previously housed Randolph’s Neapolitan-style pizzeria, and the wood-fired oven still turns out perfectly heat-blistered crusts topped with prosciutto and arugula, clams and lemon, or guanciale and egg. But a four-course meal is the way to go; opt for the chef’s special or build your own. Sharing it is an even better idea. Start with the beef tartare, then the pork and lamb meatball atop a mound of spaghetti followed by a lamb shank cradled in risotto. End your meal with espresso panna cotta. Beers from the Midwest and wines from Italy aren’t the run-of-the-mill varieties, and the seasonal cocktail list ventures even further in exploring new flavors. Take #37, an ode to autumn that includes Buffalo Trace bourbon, local Big O ginger liqueur and house-made barbecue bitters, finished with a whiff of apple wood smoke.
