About the restaurant: Celebrity chef Richard Sandoval is an international star, and the “why” is shown with his Hacienda Mexican restaurant on the Fairmont Scottsdale Princess resort property. This spot in the golf club takes things on a more eclectic romp, marrying Peru with Mexico, America and Asia.
Food & Drinks: That means a “suviche” bar offering sushi and ceviche; chifa-style fried rice of Chinese origins accented with South American ingredients; short rib flatbreads; and the wholly unique Toro salad toss of edamame, chayote, queso fresco, roasted corn, crispy tortillas and pork belly in sherry vinaigrette. It’s a bit surreal to be dining like this overlooking a world-class golf course, but the 151-bottle rum collection puts things back in perspective.
