The clean, modern dining room of Tray Kitchen is the first hint of the cutting-edge concept at work. Pops of red peppered throughout the bright space --- all blonde wood and big windows --- match the bursts of Korean flavors mixed into a menu solidly rooted in the Northwest. Ingredients are as local as the cuisine, many coming from the farm of chef/owner Heong Soon Park. Servers carry the namesake trays from table to table, offering a visual menu that may feature spot prawns with butter-poached broccoli, smoked trout mousse with avocado, and charred radicchio salad. The delivered dishes, mirroring traditional Chinese dim sum service, are on the small side, allowing diners to pick quite a few to create their meal. Larger plates, such as bone marrow with maitake mushrooms, kale and pink peppercorns, plus dessert (seasonal ice cream is the best bet) are ordered from a more traditional menu. The wine list travels the world, from New Mexico to Lebanon to the Loire Valley, featuring bottles to match the eclectic food. Cocktails, too, step outside of the box; kombucha and seltzer are featured in one drink, along with a “re-fashioned” Old-Fashioned starring fresh grapefruit juice.
