Valette Restaurant Review:
Just off Healdsburg Plaza, chef Dustin Valette (Dry Creek Kitchen) and his sommelier brother Aaron Garzini opened Valette in the same building their great grandfather operated his bakery in the 1940s. Vaulted ceilings, occasional skylights and retro snowball lighting provide a balance of whimsy and practical, and the polished wood slab bar with "Valette" inlaid in script is an elegant centerpoint. The open kitchen has a customized salumeria, showcasing a wide selection of house-made charcuterie --- a must-try for any fan of cured meats. Starters include day boat scallops set in puff pastry with caviar, and fresh-off-the-boat Hawaiian ahi crudo with 64-degree egg. Entrées are unique dishes such as cacao-cured Liberty duck with kohlrabi mousseline and pancetta-encrusted Alaskan halibut on edamame hummus. Adventurous eaters will dig the chef’s choice “Trust Me” tasting menu, and added wine pairings make for a magical experience. The expansive wine menu (presented by iPad, tableside) ranges from local to international options. End the meal with The Chocolate Bloc --- a medley of caramel-chocolate mousse, roasted cocoa and broken meringue. Warm, attentive service is enhanced by one or both brother-owners welcoming guests.
