When it comes to truth in advertising, owner Eddie Hollins’ credentials can’t be disputed -this veteran of the local Q wars weighs in at around 500 pounds. For many smoke seekers in D-town, Hollins’ smoked fare is equally weighty. His list of loyal customers includes many Broncos, Rockies and country music greats, whose pictures don the walls of Eddie’s bare-bones establishment. But for our money the home cooking here comes up on the skinny side. The ribs do deliver a nice smokiness but are often on the dry and tough side, in need of a swim in the sauce. But that’s much help either, as the rib dressing here is heavy on tomatoes, butter and sugar, lean on spice and tang. Other offerings---smoked ham and sausages to name a few---are decent, but also suffer a fate of drowning in the house basting.
