Big Jake's Island BBQ Restaurant Review: Big Jake's is the spot for keawe (the Hawaiian equivalent of mesquite) smoked barbecue on the Big Island. Jake fires up the smoker then dry rubs the meats with various special spice blends. He smokes the pork butt for 12 hours and the beef brisket up to 18 hours --- chicken at about two hours is the "fast-food" here. Don't forget the moist baby-back ribs or the beef brisket which glistens from the slowly rendered fat and has a smoke ring thick enough to make the pickiest of 'cue aficionados happy. And, if you don't like gloppy mayo potato salad, you'll like Jake's which emphasizes the mustard giving this oft-bland side dish a nice flavor boost. |
