Chef Jason Dady first unleashed his talent at the now-shuttered The Lodge Restaurant of Castle Hills. The closing of that formal dining room is a shame, but it means that Dady is now devoting more time to the Bin --- and the food shows it. The restaurant has been reconfigured to feature an opening to the kitchen, and it’s likely the chef will be front and center. Trips to Spain’s gastro-Meccas have inspired plates such as the porchetta with liquid nitrogen popcorn “grits” and serrano ham, but slow-smoked brisket could also take center stage --- along with a wood-fired pizza featuring pork belly, pineapple jam and pancetta. Come evening, patrons will want to consult the eclectic and rewarding 55 Wines under $55 list as a prelude to grilled Texas quail, black pepper meatballs with bronzed fennel, or wood-oven duck confit with sage-pecan “soil” and sherry gastrique. If available, a deconstructed passion fruit cheesecake with pink peppercorn syrup is a fitting finale on the leafy patio or in the dining room, which is now just a touch quieter than before.
