A sophisticated restaurant with a fun name, The Blue Hippo is manned by its owner, Ryan Pepple, whose mantra is “life is too short to eat boring food.” That primes you for the creative, slightly over-the-top cooking. You’ll find lamb carpaccio, pumpkin seed-crusted pork or maybe a rack of New Zealand lamb accented by a balsamic reduction. In spring, the kitchen makes much of its grilled Copper River salmon. No meal here would be complete without one of the stand-out appetizers, maybe one utilizing seasonal, vine-ripened tomatoes, or a fish chowder stocked with the products from local waters. (Pepple only buys from farmers and ranchers who believe in sustainable agriculture.) Desserts are just as tempting, so keep an eye out for the crème brûlée or bittersweet chocolate torte; sweets come with wine pairing suggestions, a happy way to end a satisfying meal.
