Joaquin Baca, once a member of David Chang’s culinary empire, has a battalion of his own at this Brooklyn eatery. The Southern-accented menu, in fact, does have some stars on it. Not surprisingly, Baca does meat, particularly pork, very well: a massive, tender pork chop and crunchy fried pigs' tails are favorites. The hot meatloaf sandwich on thick bread is included under the “small” section of the menu, but could satisfy a hungry diner. So could the tantalizing Dr. Pepper spare ribs. Even the vegetable dishes cannot escape the carnivorous influence: the refreshing lettuce wedge is drenched in a gooey but good bacon buttermilk.
