Tim Luym's Buffalo Theory is a casual neighborhood restaurant and bar that calls itself a "new American beer hall," though Luym's cuisine sets it apart. The former executive chef of Poleng Lounge (now closed) mixes bold flavors, often inspired from his native Philippines, into standout plates that pair nicely with the 30 craft beers on tap.
