Charlie Palmer's San Francisco property is a low-lit, atmospheric enclave located in the Mystic Hotel. The moody, noir-inspired room is the setting for cooking that combines American classics --- burgers and other protein-rich dinners of seasonally and locally focused cuisine. Maple-roasted red kuri squash soup, presented with a duck confit dumpling, is thick, creamy and rich. A classic seared ahi preparation gets a bed of green tea soba noodles and soy shiitakes. Mains might include a Duroc pork chop, braised short ribs and swordfish, all delivering big flavor. A first course of house-made spaghetti, thick with Fontina and nibs of pancetta, is finalized tableside, as is an entrée of spice-glazed Pekin duck --- the duck leg, warm mushroom and arugula salad that's returned to the table after plating is a highlight. Desserts are lightly updated traditional sweets: brioche bread pudding, brown sugar cake and chocolate peanut butter mousse. Many evenings jazz plays softly, and craft cocktails are always a point of pride. Slide the curtains shut in a private booth for a romantic interlude or a private discussion.
