Guy Collinet, who spent much of his professional life as a corporate chef for hotels large and small, shows what he can really do at Café Europa---from staid (though masterly) seared foie gras of duck with Granny Smith compote to the only slightly more au courant pan-seared Chilean sea bass with roasted tomato and stuffed pasta shells. We like such dependable dishes as roasted Cornish game hen with saffron risotto and Chardonnay-tarragon sauce, and pecan-crusted rack of lamb with Moroccan couscous, ratatouille and mint jus. The traditional onion soup gratinée finds no better local expression. Diners are equally old- and new-money here, though those in uptown attire will usually be seated in the more formal side of the small establishment. Eaters of every ilk seem to appreciate the classic Grand Marnier and chocolate soufflés that can be had with remarkably little advance notice.
