California Café believes the key to culinary eminence lies in the proper balance, and executive chef Charles Hochman's seasonal simplistic specialties nurture all senses. First course highlights include crab cakes with a mango-cucumber-mint salsa in a lemon beurre blanc and a bowl of creamy Yukon gold potato soup. Main courses run the gamut from Sonoran-spiced mahi mahi sided by pineapple rum salsa, fried plantains and black bean coulis to rigatoni jambalaya tossed with prawns, andouille sausage, clams and roasted peppers.
