Family-run Calypso Café reopened after a year-long renovation and is once again a high-energy gathering spot in Encinitas. This beachside cottage celebrates global cuisine, the North County beach culture, and the rhythms of reggae, blues and salsa. Owner Gilles Knafo’s culinary roots run deep: his French father was a chef and restaurateur in Paris, Morocco and, finally, Del Mar. Perhaps not surprisingly, Knafo developed for his own restaurant an eclectic menu of vibrant, colorful dishes. Seafood is especially good; we like the whole sea bass stuffed with rosemary and garlic, baked on rock salt that Knafo’s father, in his signature fisherman’s cap, serves tableside. Lobster ravioli with Dungeness crab sauce is another stand-out. The best meat choices include the lamb tagine and the thick and juicy pork chop with its apple-port wine sauce. As much as we like the food, we enjoy the atmosphere, too.
