THIS RESTAURANT IS CLOSED Carl's Pagoda Restaurant Review:
Carls Pagoda is outwardly the most Hong Kong-style restaurant of all in Chinatown. The size of most peoples dining rooms, the Pagoda is a fashionable assemblage of Chinese black lacquer and antique textiles. The late, great namesake, Carl Seto, no longer presides, but his stand-ins are doing a admirable job. Lobster is a house specialty. The chef is a master at the dry-heat cooking method of frying; whether shrimps, oysters, or soft-shell crabs, the results are dashing. XO sauce figures in several dishes: Its a love-it-or-hate-it jumble of peppers, scallions, ham, ginger, and garlic. Hong Kong in its pan-Asian tendencies, the kitchen is nonetheless one of the most capable in town.
