Chef Shaun Hergatt is behind Aqua Seafood & Caviar Bar (formerly called Caviar Bar) at Resorts World Las Vegas. Designed by Roman Vnoukov, the 105-seat restaurant’s sleek design includes Russian influences throughout with a color scheme of dark colors with hints of silver and bronze, and the exterior and bar area’s walls are comprised of vibrant diamonds. The restaurant offers world-class caviar as well as fresh fish such as Atlantic salmon, Dover sole, Mediterranean sea bass and Alaskan black cod, and menu items such as Australian wagyu, kataifi scallops with green curry sauce, tuna steak with green yuzu kosho sauce, lobster spaghetti pomodoro and uni risotto with saffron.
