Situated within the luxurious Allegretto Vineyard Resort by Ayres, Cello Ristorante & Bar provides a fine setting for any occasion, from a special dinner to a casual get-together over flatbreads and wine with friends. Every meal showcases the deft flair that chef Eric Olson brings to his Italian/Mediterranean dishes. Favorites on the locally driven menu are the smoked salmon omelet, a lunch of house-made Italian sausage ravioli in a creamy garlic sauce, and a dinner entrée of risotto with foraged mushrooms. Local gelatos are available for dessert, though diners might opt for a coffee crème brûlée instead. The bar program is locally driven as well, making good use of spirits from the growing number of Central Coast distilleries. Seating is available indoors or outdoors; both offer views of the surrounding hillsides. Guests are also welcome to stroll around the hotel grounds and admire the breadth of the eclectic art on display.
