Best known in years past as a farm market vendor of vegetarian tacos, Chaia opened in Georgetown in a small yet friendly setting. You can grab a seat, though space is limited, or pick up your taco meal to carry away. Because the menu depends on fresh and seasonal vegetables, taco combos may change from time to time, but up front are the smoky collards with cotija cheese tacos. Fortunately, as you stand at the counter to order your food, you can get advice and direction from staff. Among the few sweets for dessert are a spicy chocolate bar and a Mexican-style cookie. Gluten-free and vegan are key words here. Drinks include juices, teas and wine.
