![]() : With direct access from The Quad Resort & Casino, Chayo is situated near the beginning of The LINQ corridor, which leads to the Las Vegas High Roller Observation Wheel, affording unobstructed views of the attraction. The two-level, 14,000-square-foot concept in Mexican dining offers a selection of tequilas and fare by French-trained executive chef Ernesto Zendejas. Décor elements include exposed beams, distressed fixtures, contemporary lighting and ornate frames showcasing classic Mexican photographs and artwork; there’s also a mechanical bull. Begin with the pulled chicken and queso fresco tostada, the tortilla soup made with tomato broth and avocado, or one of the tacos with options of Maine lobster, carnitas, rib-eye, shrimp, grilled chicken or seasonal fish. For an entrée, we like the ahi with fingerling potatoes and mole verde; pork enchiladas with cascabel chile sauce, sesame seeds, avocado and crema Mexicana; or one of the Prime steaks, which come in cuts of rib-eye or New York strip. Finish with the chocolate abuelita brownie crafted with Mexican chocolate and mint crème anglaise. For a pick me up, try the liquid dessert consisting of Grey Goose, Kahlúa, espresso and crème de cacao. |
