Shea Gallante, the erstwhile top toque at Cru, is the chef at Chevalier, located in the posh Baccarat Hotel & Residences New York. The menu is haute French fare and the restaurant features a 20-seat chef's table. An elegant dining room distinguished by plush banquette seating and museum quality decorative arts sets the stage for creative selections such as a duo of Hudson Valley foie gras with brûlée garnet plums in a Sauternes gastrique served with miso brioche. The dish is pungent and full of flavor, while a Long Island fluke crudo with sour Maine blueberries, house-made yogurt and a sorrel jus is delicate and mild with a touch of tartness. Entrées are similarly well prepared. A curry spiced black cod with fingerling potatoes, kohlrabi and razor clams in a coconut broth has a welcomingly subtle heat and sweetness, whereas the Berkshire pork loin with a ragoût of market shelling beans, oven-dried tomatoes and pickled cherries presents a lively combination of savory and ripe citrus tastes. The wine list is comprised of carefully chosen French regional and international varieties. End the meal with artfully crafted desserts.
