It's predictable that Green Valley Ranch, the atypical, un-Vegas casino away from the Strip, would do its own thing in terms of representing global cuisine. Chef Tony Lee has imported his native Hong Kong know-how and recipes to add a tasty Asian touch. The modern-looking China Spice, located in the quietest spot of the gambling arena, features pastel-green and wood décor combinations. Past the inviting bar, well-separated tables offer diners a moment of tranquility and a gustatory interlude. They will find both --- at reasonable prices to boot --- with a choice of appetizers such as Peking duck served with a steamed bun, cucumber, scallion and hoisin sauce. Health-conscious guests might prefer the lighter minced chicken with lettuce wrap or the stir-fried vegetables. Crispy fried garlic-marinated chicken in a brown garlic sauce is one of the signature dishes. There is an abundant choice of seafood including sole, sea bass and six shrimp options. Vegetable preparations such as long beans, asparagus, snow peas, Chinese broccoli and spinach are coined on the menu with a heart, indicative of a healthy choice. Unlike a typical Chinese restaurant, there's a short, reasonable list of non-Asian desserts such as chocolate cheesecake and caramel and peanut butter tart.
