The tastefully restrained interior of Chow belies the full-on flavors you’ll find in its inventive Asian dishes, and chefs Justin Gabbert and Alan Hsu are continually coming up with new ideas, including banh mi sandwiches with house-made pickles and Korean fish tacos with sushi rice. Lunch offers other items such as a char siu roast pork sandwich with crunchy pickled daikon (order it with the side salad so you can have the wasabi buttermilk dressing). For dinner, opt for the decadent dong po pork belly, or the spot-on tastes of the stir-fried shrimp and bacon with house-made noodles. Desserts include the refreshing lemon grass sorbet, served with an almond cookie. Be sure to check out the eclectic selection of beer, wine and hot and cold saké. This restaurant is a collaboration between Robin Covey of Novo in San Luis Obispo and Shanny Covey of Robin’s in Cambria, and in keeping with the Coveys’ philosophy at their other two restaurants, Gabbert and Hsu are sourcing local and organic ingredients whenever possible, and many menu items are vegan and-or gluten-free, or can be made so upon request.
