At his third Parisian outpost, chef Claude Colliot serves market-fresh, creative cuisine in a contemporary Marais setting. Signature dishes range from crisp sweetbreads with grapefruit and ginger, to crab and artichoke mousseline. The “spoon and fork” menu is an inventive (knifeless), multi-course affair featuring everything from pineapple soup infused with mascarpone to orphie (garfish) fillet.
